
Beef Radish Soup (소고기뭇국)

Beef and Radish Soup (소고기뭇국)
- Radish: 1 1/2 cups (230g)
- Beef brisket: 1 cup (150g)
- Onion: 1/4 (50g)
- Sesame oil: 1 tbsp (8g)
- Vegetable oil: 1 tbsp (8g)
- Green onion: 1/3 cup (30g)
- Minced garlic: 1 tbsp (15g)
- Soy sauce: 2 tbsp (20g)
- Anchovy sauce: 2 tbsp (20g)
- Salt: 1/2 tbsp (5g)
- Black pepper: To taste
- Water: 1.5L
[Instructions]
1. Prepare the ingredients
- Slice the radish into 3cm squares.
- Remove any blood from the beef. Chop the green onion and slice the onion.
- Add sesame oil and vegetable oil to a pot and stir-fry the beef.
- Once the beef is seared, add the radish and stir-fry together.
- Once the beef is cooked, add water (1.5L), minced garlic, soy sauce, and anchovy sauce. Simmer over medium heat for about 20 minutes.
- Once the beef is tender, add the onion and simmer.
- Season with salt, add green onion and black pepper to finish.
Beef and Mushroom Soup (소고기버섯국)
- Radish: 1 1/2 cups (230g)
- Thinly sliced beef for bulgogi: 2/3 cup (100g)
- Button mushrooms: 3 (180g)
- Sesame oil: 1 tbsp (8g)
- Vegetable oil: 1 tbsp (8g)
- Green onion: 1/3 cup (30g)
- Egg: 1 (50g)
- Minced garlic: 1 tbsp (15g)
- Soy sauce: 2 tbsp (20g)
- Anchovy sauce: 2 tbsp (20g)
- Salt: 1/2 tbsp (5g)
- Black pepper: To taste
- Water: 1.5L

1. Prepare the ingredients
- Slice the radish into 3cm squares.

- Chop the green onion and whisk the egg.
2. Stir-fry the beef and radish
- Add sesame oil and vegetable oil to a pot and stir-fry the beef.
- Once the beef is halfway cooked, add the radish and stir-fry together.
- Once the beef is cooked, add water (1.5L), minced garlic, soy sauce, and anchovy sauce. Simmer over medium heat.
- Once the radish is fully cooked, remove it and add the mushrooms. Simmer.
4. Add the egg and green onion
- Season with salt and add the egg. Stir gently.
- Finally, add the green onion and simmer.
- Serve the soup and sprinkle with black pepper.
Cooking Tips
- Removing blood from beef: Removing the blood thoroughly will result in a cleaner-tasting broth.
- Thickness of radish: Thicker radish slices will produce a richer flavor.
- Adding mushrooms: You can also add shiitake or oyster mushrooms.
- Adjusting seasoning: Season with soy sauce and anchovy sauce first, then adjust with salt.
