Dakguktang Ingredients (for approximately 4 servings)

Chicken Broth Ingredients

  • Chicken (No. 9) 1 whole
  • Onion 125g
  • Green Onion 1 stalk (100g)
  • Water 17 cups (3060ml)

Dakguktang Ingredients

  • Boiled Chicken 1 whole
  • Green Onion 8 tablespoons (56g)
  • Cooked Rice 4 bowls (800g)
  • Flower Salt (Fine Sea Salt) 1 tablespoon (12g)
  • Black Pepper To taste

How to Make Chicken Broth

1. Preparing the Chicken

1. Use a knife or scissors to slit open the chicken’s belly and flatten it.
2. Remove the innards and impurities by gently pushing them out with your fingers, and then rinse thoroughly.

  • Soaking the chicken in cold water to remove blood will result in a cleaner broth.

2. Boiling the Basic Broth

1. In a large pot, add **17 cups (3060ml) of water**, and add the prepared **chicken, onion (with skin), and green onion (cut into large pieces)**. Place over high heat.
2. Once boiling, reduce the heat to medium and simmer for 30 minutes.
3. After 30 minutes, if the chicken’s ankle meat is rising and bone is showing, use tongs to check if the breast and leg meat are cooked by tearing them apart.
4. Once the chicken is fully cooked, remove the chicken, and simmer the remaining broth for another 30 minutes.

  • If the chicken is large or a native breed, increase the simmering time.

How to Make Dakguktang

1. Shredding the Chicken Meat

1. Remove the boiled chicken and shred the meat into bite-sized pieces.
2. Do not discard the chicken bones; add them back to the broth and simmer again to deepen the flavor.

2. Finishing the Broth

1. After simmering again with the chicken bones, add 1 tablespoon of flower salt to season.
2. Allow the broth to simmer sufficiently to deepen the flavor.

3. Serving in a Clay Pot

1. Finely slice the green onion to 0.3cm thickness.
2. Add **one bowl of warm cooked rice (200g)** to a clay pot.
3. Place the shredded chicken meaton top of the rice.
4. Strain the broth through a sieve and pour it into the clay pot,, and sprinkle with the finely sliced green onion and black pepper to finish.
