Kelp Noodle Soup
Dasima Kalgukksuis a healthy dish combining a deep and savory broth made with dasima (kelp) and chewy noodles. Following Chef Baek Jong-won's recipe, from the broth to preparing the ingredients, anyone can easily achieve a perfect flavor. Dasima Broth (approx. 4 servings)
Dasima Kalgukksu (approx. 2 servings)
1. Making the Dasima Broth
1. Add 54g of dried dasima (kelp)to a mixing bowl and pour in **15 cups (2700g) of warm water**. Let it soak for about 5-10 minutes.
2. Prepare to bring out the deep flavor of the broth using the soaked dasima.
2. Ingredient Preparation
1. Remove the innards of the anchoviesand finely grind them in a mixer to prepare anchovy powder.
2. Julienne the pumpkin, carrot, potato, and onionto about 0.4cm thickness and 7cm length.
3. Finely chop the green onionand Korean chili pepper.
4. Roll up the soaked dasimaand julienne it lengthwise.
5. Rinse the kalgukksu noodlesin a strainer to prevent breakage, then rinse under running cold water to remove excess starch.
3. Boiling the Broth
1. In a pot, add approx. 6 cups (1100g) of dasima broth, 1 tbsp of soy sauce, and 3/5 tbsp of anchovy powderand bring to a boil over medium heat.
2. Once the broth boils, add the prepared kalgukksu noodlesand dasima strips.
4. Adding Vegetables
1. Once the broth boils again, add the potato, carrot, and onionand simmer until cooked.
2. Season with approx. 1/6 tbsp of salt.
3. When the potato is about half cooked, add the pumpkin.
5. Finishing
1. As the kalgukksu noodles cook, add the Korean chili pepperand green onionto enhance the flavor of the broth.
2. Serve the finished kalgukksu in bowls and sprinkle with a little sesame seedsand black pepperto finish.
