Kimchi and Tofu Side Dish and Anju (Korean liquor side dish)

Dubu Kimchi
Baek Jong-won's Dubu Kimchi recipe is a popular dish featuring a harmonious blend of well-fermented kimchi, savory pork, and soft tofu.
Ingredients
- Fresh kimchi (slightly fermented is ideal) 300g
- Pork (pork shoulder recommended) 200g
- 1 block of tofu (approx. 300g)
- 1 tbsp sugar
- 1 tbsp soy sauce
- 1 tbsp minced garlic
- 1/2 tbsp red pepper flakes
- 1 tbsp sesame oil
- 1 cup water
- 1 scallion
- 1/2 onion
- A little carrot (optional)
Instructions
- Remove excess water from the tofu and cut into bite-sized pieces.
- Lightly oil a frying pan and pan-fry the tofu until golden brown. Set aside.
- Add the pork to the pan and stir-fry over medium heat until the outside is browned.
- Once the pork starts to release its fat, add the sugar and caramelize slightly.
3. Add Kimchi and Vegetables
- Add the kimchi and red pepper flakes, minced garlic to the pork and stir-fry.
- Stir-fry for about 5 minutes until the kimchi softens.
- Add onions, scallions, and carrots for added color and flavor.
- Add 1 cup of water to the pan and stir to combine the seasoning and ingredients.
- Add soy sauce to adjust the seasoning.
- Reduce heat to low and simmer for 5-10 minutes to allow the flavors to meld.
- Place the stir-fried kimchi and pork on a plate and garnish with the pan-fried tofu.
- Drizzle with sesame oil and sprinkle with sesame seeds to finish.
