Baek Jong-won's Hamburg Steak Recipe

Hamburg Steak


Tender and flavorful hamburg steak is a perfect main dish for a special occasion. Try making it easily using Baek Jong-won's style!


[ Ingredients ]

Caramelized Onions

  • Onion: 2 cups (200g)
  • Minced garlic: 1 tbsp (15g)
  • Salt: 1/2 tbsp (5g)
  • Stick butter: 1/2 (40g)
  • Cooking oil: 2 tbsp (15g)

Steak

  • Ground beef: 1 and 1/2 cups (250g)
  • Ground pork: 2 cups (350g)
  • Eggs: 2 (110g)
  • Egg (for garnish): 1
  • Caramelized onions: all
  • Breadcrumbs: 2 cups (100g)
  • Worcestershire sauce: 4 tbsp (40g)
  • Ketchup: 1 and 1/2 tbsp (25g)
  • Mozzarella cheese: 2 tbsp (30g)
  • Water: 2/3 cup (120g)
  • Rice: as needed
  • Parsley powder: as needed
  • Cooking oil: as needed

Steak Sauce

  • Button mushroom: 1 (60g)
  • Onion: 1 (100g)
  • Stick butter: 1/2 (40g)
  • Soy sauce: 2 tbsp (20g)
  • Granulated sugar: 4 tbsp (40g)
  • Ketchup: 4 tbsp (80g)
  • Water: 2/3 cup (120g)
  • Pepper: as needed

[ Instructions ]

1. Prepare Caramelized Onions

1. Finely chop the onion.
2. In a frying pan, add cooking oil and butter and melt over medium heat.
3. Add the chopped onion, minced garlic, and salt, and sauté until the onion becomes translucent.
4. Let the sautéed onion cool and use it for the steak batter.


2. Make Steak Batter

1. In a large bowl, add ground beef, ground pork, sautéed onion, breadcrumbs, Worcestershire sauce, ketchup, 2 eggs, and mozzarella cheese.
2. Add water little by little and knead until the batter becomes soft and sticky.


3. Shape the Steak

1. Lightly grease your hands and shape the batter into round patties.
2. Add cooking oil to a frying pan and cook the patties over medium-low heat until browned on both sides.


4. Make Steak Sauce

1. Thinly slice the button mushrooms and onions.
2. Melt butter in a frying pan and sauté the sliced mushrooms and onions.
3. Add soy sauce, granulated sugar, ketchup, water, and pepper, and simmer over low heat to complete the sauce.


5. Garnish with Fried Egg

1. Add oil to a pan and fry the egg until half-cooked.
2. Prepare to place it on the steak.


6. Plating

1. Place rice on a plate and top with the steak.
2. Top with the fried egg and drizzle with the sauce.
3. Sprinkle with parsley powder to finish.

  • Meat Ratio: The right ratio of beef and pork (3:7) creates a tender and juicy texture.
  • Sauce Adjustment: Adjust the ratio of soy sauce and sugar in the steak sauce to your liking.
  • Additional Vegetables: Adding carrots, bell peppers, etc. to the sauce can enhance the flavor.
