Ingredients

  • Radish: 1 medium (approx. 500g)
  • Salt: 1 tbsp
  • Vinegar: 2 tbsp
  • Sugar: 2 tbsp
  • Jeotgal (fermented seafood sauce)(optional): 1 tbsp
  • Gochugaru (Korean chili powder): 1 tbsp
  • Green onion: 1/2 (thinly sliced)
  • Garlic(optional): 2 cloves (minced)
  • Ginger(optional): small piece (grated)

Instructions

1. Prepare the Radish

1. Wash the radish thoroughly and peel it.
2. Use a mandoline slicer or a knife to thinly slice it.

  • It's important to slice the radish to a consistent thickness of about 2-3mm.
    3. Place the thinly sliced radish in a large bowl.

2. Marinate the Radish

1. Sprinkle saltevenly over the radish.
2. Gently massage the salted radish.
3. Let it sit for 10-15 minutes to remove excess moisture.

3. Make the Seasoning Sauce

1. In a separate bowl, add vinegar, sugar, jeotgal (optional), and gochugaruand mix well.
2. Add minced garlicand grated gingerto taste.
3. Stir well to combine the seasoning.

4. Mix the Moo Saengchae

1. Gently squeeze out the excess water from the marinated radish.
2. Add the drained radish to the seasoning sauce.
3. Add the sliced green onionand mix thoroughly.

5. Rest and Adjust Taste

1. Cover the Moo Saengchae in the bowl with plastic wrap and refrigerate for at least 30 minutes.

  • The longer it rests, the more flavorful it becomes.
    2. After 30 minutes, taste and adjust the seasoning by adding salt, sugar, vinegar, or jeotgalas needed.
