Baek Jong-won's Pork Dumpling Recipe

Pork Dumplings

Make juicy and flavorful meat dumplings easily at home!


[ Ingredients ]

Dumpling Filling Ingredients

  • Tofu: 1/2 block (160g)
  • Garlic Chives: 1 cup (70g)
  • Green Onions: 1 cup (80g)
  • Minced Garlic: 1 tbsp (15g)
  • Nappa Cabbage: 1 cup (70g)
  • Minced Ginger: 1/4 tbsp (3g)
  • Ground Pork (leg meat): 2 cups (360g)
  • Pork Fat: 1/2 cup (90g) (optional)
  • Sweet Potato Starch Noodles (Dangmyeon): 100g
  • Bean Sprouts: 250g
  • Dumpling Wrappers: 40-50 pieces

Dumpling Filling Seasoning

  • Soy Sauce: 3 tbsp (30g)
  • Salt: 1/3 tbsp (3g)
  • Sugar: 1/2 tbsp (5g)
  • All-purpose Stir-fry Sauce: 3 tbsp (30g)
  • Sesame Oil: 2 tbsp (15g)
  • MSG: 1/2 tbsp (5g)
  • Black Pepper: To taste

[ Instructions ]

Prepare the Ingredients

1. Sweet Potato Starch Noodles (Dangmyeon):

  • Soak in lukewarm water for about 30 minutes until soft, then boil in boiling water for 3 minutes.
  • Rinse with cold water, drain, and chop finely.

2. Bean Sprouts:

  • Blanch in boiling water, then rinse with cold water and drain.
  • Chop finely.

3. Tofu:

  • Crumble with cheesecloth and completely remove excess water.

4. Vegetables:

  • Finely chop the garlic chives and green onions, and thinly slice the nappa cabbage.

Make the Dumpling Filling

5. In a large bowl, combine the tofu, garlic chives, green onions, nappa cabbage, bean sprouts, sweet potato starch noodles, ground pork, minced ginger, and minced garlic and mix well.
6. Add the seasonings (soy sauce, salt, sugar, all-purpose stir-fry sauce, sesame oil, MSG, and black pepper) and mix again to complete the dumpling filling.
7. For extra juicy dumplings, add pork fat as desired.

Make and Steam the Dumplings

8. Wet the edges of the dumpling wrapper and place about 1 tbsp (30g) of the filling in the center.
9. Fold the wrapper in half and firmly pinch the edges to seal.
10. Bring water to a boil in a steamer, place the dumplings in the steamer, cover, and steam for about 6 minutes.


Cooking Tips

  • Remove Excess Moisture: Make sure to thoroughly remove excess moisture from the tofu and bean sprouts to prevent soggy dumplings.
  • Pork Fat: Adding pork fat will make the dumplings more tender and flavorful.
  • Adjust Steaming Time: Adjust the steaming time depending on the size of the dumplings.
