Today, we introduce two styles of egg sandwiches using basic Mayonnaise and spicy and sweet Sriracha Mayonnaise.


Egg Sandwich Ingredients (for 2 servings)

Egg Sandwich

  • Eggs 6
  • Bread 4 slices
  • Slice Cheese 2 slices
  • Bacon 3 slices (48g)
  • Stick Butter Appropriate amount
  • Mayonnaise Appropriate amount
  • Sriracha Mayonnaise Appropriate amount

Mayonnaise

  • Mayonnaise 1/3 cup (60g)
  • Granulated Sugar 1 tbsp (12g)

Sriracha Mayonnaise

  • Mayonnaise 1/3 cup (60g)
  • Granulated Sugar 1 tbsp (12g)
  • Fine Red Pepper Powder 1/2 tbsp (3g)
  • Vinegar Approx. 2 and 1/2 tbsp (24g)

How to Make Egg Sandwich

1. Prepare the sauces

1. Mayonnaise: In a bowl, add 1/3 cup of mayonnaise and 1 tablespoon of granulated sugar and mix until the sugar is completely dissolved.
2. Sriracha Mayonnaise: In a bowl, add 1/3 cup of mayonnaise, 1 tablespoon of granulated sugar, 1/2 tablespoon of fine red pepper powder, 2 and 1/2 tablespoons of vinegar and mix until the sugar is dissolved.

2. Toast the bread and bacon

1. Coat a frying pan with butter and toast the bread on both sides until golden brown. This process adds a nutty flavor to the bread.
2. In the same pan, add the bacon and cook until golden brown.

3. Make scrambled eggs

1. Crack 6 eggs into a bowl and whisk gently with chopsticks.
2. Coat a frying pan with butter and heat over medium heat. Pour in the egg mixture.
3. Once the eggs start to cook, gently stir to create a fluffy scramble.
4. When the eggs are about half cooked, reduce the heat to low and use a spatula to shape them to the size of the bread.
5. Turn off the heat when a little egg mixture remains, and place a slice of cheeseon top of the eggs. Let it sit for a moment so the cheese melts naturally.

4. Assemble the sandwich

1. Place the toasted side down on the bread and spread mayonnaise and Sriracha mayonnaiseon each slice.
2. Place the cheese-topped eggson top of the spread bread.
3. Spread more mayonnaiseon top of the eggs for added richness.
4. Top with the cooked bacon, and cover with the other slice of bread to complete the sandwich.
