  • Green Onion (Daepa) about 4/5 stalks (84g)
  • Onion (Yangpa) about 1/2 (114g)
  • Minced Garlic about 2 tbsp (42g)
  • Ground Pork about 1 cup (140g)
  • Brown Sugar (Hwangseoltang) 5/6 tbsp (10g)
  • Soy Sauce (Jin Ganjang) about 1 and 1/2 tbsp (14g)
  • Traditional Soybean Paste (Jae-rae Sik Doenjang) about 2 and 1/2 tbsp (48g)
  • Gochujang (Korean Chili Paste) about 3/4 tbsp (16g)
  • Red Chili Pepper (Honggochu) about 1 and 1/2 (14g)
  • Cheongyang Chili Pepper (Cheongyang Gochu) about 2 (22g)
  • Coarse Korean Chili Powder (Geulgeun Gochugaru) 1 tbsp (6g)
  • Fine Korean Chili Powder (Go-un Gochugaru) 1/3 tbsp (2g)
  • Sesame Oil (Chamgirum) 2 tbsp (14g)
  • Sesame Seeds (Kkaesogeum) 2/3 tbsp (4g)
  • Cooked Rice (Bap) 2 servings (400g)

How to Make Seasoned Mustard Spinach and Soybean Paste Rice Bowl

1. Prepare the Ingredients

1. Seasoned Mustard Spinach (Yeolmu)Wash thoroughly, drain, and slice to about 2cm in length.
2. Onion (Yangpa)Cut into 0.7cm squares. Finely chop the green onion (Daepa), red chili pepper (Honggochu), and Cheongyang chili pepper (Cheongyang Gochu).

2. Make the Scallion Oil

Heat 1/2 cup of cooking oilin a pan over low heat. Add the green onions (Daepa)and sauté to create scallion oil. Once the aroma of the scallion oil rises, the basic base of the dish is complete.

3. Stir-fry the Pork and Onion

1. Add 1 cup of ground porkto the scallion oil and stir-fry, breaking up any clumps. As the pork cooks, a savory flavor will infuse into the oil.
2. Once the pork is cooked, add the onion (Yangpa)and stir-fry until lightly browned.
3. Add 2 tbsp of minced garlicand 5/6 tbsp of brown sugar (Hwangseoltang)and stir-fry until slightly caramelized, enhancing the flavors of the ingredients.

4. Stir-fry the Soybean Paste and Gochujang

1. Add 1 and 1/2 tbsp of soy sauce (Jin Ganjang)and stir-fry until slightly browned. The soy sauce combines with the oil to create a rich flavor.
2. Add 2 and 1/2 tbsp of traditional soybean paste (Jae-rae Sik Doenjang)and 3/4 tbsp of Gochujang (Korean Chili Paste)and stir-fry until well combined. The soybean paste and Gochujang must be thoroughly stir-fried to bring out their unique savory and umami flavors.

5. Add the Chili Powder and Seasoned Mustard Spinach (Yeolmu)

1. Add 1 tbsp of coarse Korean chili powder (Geulgeun Gochugaru)and 1/3 tbsp of fine Korean chili powder (Go-un Gochugaru)to add color and spice. Stir-fry the chili powder over low heat to prevent burning.
2. Add the prepared seasoned mustard spinach (Yeolmu)and stir-fry until wilted. If needed, add a small amount of water.

6. Finishing Touches

1. Once the seasoned mustard spinach (Yeolmu) is cooked, add the Cheongyang chili pepper (Cheongyang Gochu)and red chili pepper (Honggochu)and stir-fry again.
2. Add 2 tbsp of sesame oil (Chamgirum), mix well, and turn off the heat.
