- Dongtae Jeon, Yuk Jeon: Cut into appropriately sized pieces
3. Add the Jeon (Pancakes)
- Add the prepared Jeon to the boiling broth.
- Only add about 1/4 of the pot with Jeon to prevent the broth from losing its flavor.
- Bring to a boil over medium heat, then reduce heat to low and cover.
- Be careful not to let the broth boil over.
- Add garlic, saeujeot (salted shrimp), and gochugaru (Korean chili powder)and mix well.
- Adjust the seasoning with gukganjang (soy sauce).
- Add the finely chopped green onion (daepa)and simmer for a while, then it's done.
Tips for Delicious Jeon Jjigae
1. Adjusting the Amount of Jeon (Pancakes)
- If you add too much Jeon, the broth may become cloudy and lose its flavor balance, so add an appropriate amount.
- Using rice water will result in a clean and deep-flavored broth.
3. The Role of Saeujeot (Salted Shrimp)
- Saeujeot adds a savory taste and adjusts the saltiness, making it an important ingredient.
- The longer you simmer it over low heat, the better the Jeon and broth blend, resulting in a deeper flavor.
