[Ingredients]
- Potatoes: 2 (400g)
- Onion: 1/2 (100g)
- Green onion: 1 cup (80g)
- Cheongyang peppers: 3 (15g)
- Canned ham: 1 can (200g)
- Minced garlic: 1 tbsp (15g)
- Doenjang (fermented soybean paste): 1/2 tbsp (10g)
- Gochujang (Korean chili paste): 1 tbsp (20g)
- Coarse red pepper powder: 2 tbsp (10g)
- Brown sugar: 1 tbsp (10g)
- Jinjang (thick soy sauce): 4 tbsp (40g)
- Water: 4 cups (700g)
[Instructions]
1. Prepare the ingredients
- Cut the potatoes and onions into thick 1cm slices.
- Finely chop the cheongyang peppers and green onions.
- Put the canned ham in a ziplock bag and finely crush it by hand.
- Place the potatoes at the bottom of the pot, then layer the onions, green onions, cheongyang peppers, and canned ham on top.
- Add brown sugar, red pepper powder, minced garlic, gochujang, doenjang, and jinjang to the pot, then pour in the water.
- Bring the pot to a boil over high heat.
- Once boiling, reduce the heat to low and stir to mix the seasoning well.
- Simmer until the broth reduces by about half.
- Adjust the seasoning by adding more jinjang to taste.
- Once the potatoes are cooked through and slightly mashed, turn off the heat and serve.
Cooking Tips
- Adjusting Potato Texture: Check the potatoes during cooking to prevent them from becoming completely mashed.
- Cheongyang Pepper Substitute: If you want to reduce the spiciness, use regular peppers instead of cheongyang peppers.
- Ham Substitute: You can also use minced pork or bacon instead of spam.
- Additional Ingredients: Adding tteok (rice cakes) or tofu will make it a more filling meal.
Suggested Side Dishes
- White rice: Goes well with the savory gamja jjigae broth.
- Kimchi: Recommended as a side dish to enhance the savory flavor.
