
Mushroom hot pot
When you crave a warm stew, try making this rich and flavorful stew using shiitake mushrooms and pork. This recipe incorporates Baek Jong-won's tips, making it simple yet delicious.
Ingredients
- Dried shiitake mushrooms: 30g (soaked)
- Pork: 200g (pork belly or shoulder butt)
- Green onion: 1 stalk
- Onion: 1/2
- Glass noodles: As needed (optional)
- Beef bone broth: 500ml (or anchovy kelp broth)
- Water: 500ml
- Soy sauce: 1 tbsp
- Dark soy sauce (Nochu): 1/2 tbsp
- Korean chili powder: 1 tbsp
- Salt: To taste
- Black pepper: To taste
- Sesame oil: 1 tbsp
- Chopped green onion
- Sesame seeds
Preparation
1. Prepare the shiitake mushrooms
- Soak the dried shiitake mushrooms in cold water for at least 30 minutes.
- Don't discard the soaking water; use it for the broth.
- Cut the pork into bite-sized pieces.
3. Prepare the vegetables
- Finely chop the green onion and onion into bite-sized pieces.
Cooking Process
- Add sesame oil to a pot and heat over medium heat. Then add the pork and stir-fry.
- Stir-fry until the pork is browned to enhance the flavor.
- Add the onion to the pork and stir-fry until translucent.
- Add soy sauce, dark soy sauce, Korean chili powder, salt, and black pepper, and mix well.
- Pour the soaked shiitake mushrooms, the soaking water, and beef bone broth or anchovy kelp broth into the pot.
- Add 500ml of water and bring to a boil.
- Once it boils over high heat, reduce heat to medium-low and simmer for 20-30 minutes.
- Allow the pork to become tender and the broth to thicken.
6. Add glass noodles (optional)
- If using glass noodles, add them at the end of the simmering process and cook according to package instructions.
- Taste the broth and adjust the seasoning with salt if needed.
Finishing and Serving
- Serve the finished stew in a bowl, garnished with chopped green onion and sesame seeds.
- Serve immediately while hot.
