[Ingredients]

Fried Pork

  • Pork (butt) 100g
  • Tempura flour 1 cup (110g)
  • Water 2/3 cup (120g)
  • Salt to taste
  • Black pepper to taste

Garlic Sauce

  • Mayonnaise 3/4 cup (120g)
  • Vinegar 2 tablespoons (20g)
  • Granulated sugar 3 tablespoons (30g)
  • Peeled garlic 1/4 cup (30g)
  • Black pepper to taste

Hamburger (1 serving)

  • Hamburger bun 1
  • Fried pork 2 pieces (60g)
  • Garlic sauce 3 tablespoons (45g)
  • Tomato to taste
  • Lettuce to taste
  • Onion to taste

[Instructions]

1. Prepare the ingredients

  • Slice the tomatoes to about 0.5cm thickness.
  • Slice the onions into rings or halve them and thinly slice them.
  • Finely chop the peeled garlic and soak it in cold water to remove the pungency.
    • TIP: To reduce the pungency of the garlic and enhance its flavor, soak it in cold water and then pat it dry with a paper towel.

2. Make the garlic sauce

  • In a large bowl, combine the mayonnaise, granulated sugar, vinegar, minced garlic, and black pepper and mix well.
    • TIP: You can adjust the amount of garlic to your liking or add a little honey for a sweeter taste.

3. Prepare the fried pork

  • Season the pork with salt and black pepper.
  • In a large bowl, mix the tempura flour and water to make the batter.
  • Coat the seasoned pork evenly with the batter and fry it in oil preheated to 170-180°C until golden brown.
    • TIP: For a crispier texture, you can double-fry it. Fry for 3 minutes at medium temperature for the first fry and 1 minute at high temperature for the second fry.

4. Toast the hamburger buns

  • Place the hamburger buns on a frying pan and toast them over low heat.
    • TIP: Lightly buttering the buns before toasting will enhance their flavor.

5. Assemble the hamburger

  • Generously spread garlic sauce on the toasted bun.
  • Add lettuce, then tomato and fried pork in layers.
  • Add more garlic sauce between the fried pork layers, and finally top with onions.
  • Cover with the other bun and drizzle with a little more garlic sauce to finish.
