- Pork (butt) 100g
- Tempura flour 1 cup (110g)
- Water 2/3 cup (120g)
- Salt to taste
- Black pepper to taste
- Mayonnaise 3/4 cup (120g)
- Vinegar 2 tablespoons (20g)
- Granulated sugar 3 tablespoons (30g)
- Peeled garlic 1/4 cup (30g)
- Black pepper to taste
- Hamburger bun 1
- Fried pork 2 pieces (60g)
- Garlic sauce 3 tablespoons (45g)
- Tomato to taste
- Lettuce to taste
- Onion to taste

1. Prepare the ingredients
- Slice the tomatoes to about 0.5cm thickness.
- Slice the onions into rings or halve them and thinly slice them.
- Finely chop the peeled garlic and soak it in cold water to remove the pungency.
- TIP: To reduce the pungency of the garlic and enhance its flavor, soak it in cold water and then pat it dry with a paper towel.
- In a large bowl, combine the mayonnaise, granulated sugar, vinegar, minced garlic, and black pepper and mix well.

3. Prepare the fried pork
- Season the pork with salt and black pepper.
- In a large bowl, mix the tempura flour and water to make the batter.
- Coat the seasoned pork evenly with the batter and fry it in oil preheated to 170-180°C until golden brown.
- TIP: For a crispier texture, you can double-fry it. Fry for 3 minutes at medium temperature for the first fry and 1 minute at high temperature for the second fry.
4. Toast the hamburger buns
- Place the hamburger buns on a frying pan and toast them over low heat.

5. Assemble the hamburger
- Generously spread garlic sauce on the toasted bun.
- Add lettuce, then tomato and fried pork in layers.
- Add more garlic sauce between the fried pork layers, and finally top with onions.
